Easy Meatballs Meal

This is one of those great all-in-one Thermomix meals. Meat, sauce and vegetables cooked at the same time! This is also one of those recipes that can easily be modified to utilize any meat or vegetables that you may have in your fridge or freezer. You could also leave out the bread to make it gluten-free. A very clean and healthy meal overall. 

I looked at this recipe from My Melbourne Thermomix as a basis. Here's the version I made tonight:


EASY MEATBALLS MEAL


  • 2 pieces of bread (end pieces or stale or toasted)
Chop 10 seconds speed 7. Set aside.
  • 1 large garlic clove (peeled)
  • 1 onion (halved)
  • 1 carrot (roughly chopped)
  • Large handful of fresh herbs or dried herbs to taste (parsley, basil, oregano etc)
Chop 5 seconds speed 7.
  • 450g beef cubed, partially frozen (I used rump steak)
Add to chopped ingredients in bowl and turbo 3 - 5 times 1 sec until desired consistency is reached. Add breadcrumbs and mix on speed 6 for about 10 seconds or until mixed through.

Roll tablespoonfuls into balls and place in lightly greased Varoma dish (I sprayed with olive oil spray).



Set Varoma aside and prepare the sauce:
  • 1 garlic clove
  • 1/2 onion, peeled
  • More fresh/dried herbs to taste
Chop 3 sec speed 7. Scrape down bowl.
  • 1x 400g tin diced tomatoes
  • 1 tab tomato paste
  • 1 tab TM veg stock concentrate
  • 100g water OR red wine
Add remaining ingredients and cook 25 mins, Varoma speed 2. Place Varoma (with prepared meatballs) on top of lid to steam.

While sauce and meatballs are cooking, prepare your ribbon vegetables:
  • 2 carrots, peeled
  • 2 zucchini, washed
Ribbon vegetables with a vegetable peeler. Place on Varoma tray and insert into Varoma for last 3 mins of cooking.


Check meatballs are cooked through. Serve meatballs with ribbon vegetables and tomato sauce. Enjoy!
